Winemaking
Manual cluster selection, chilled fermentation for 18 days at a temperature of 26⁰C. Malolactic fermentation in inox tanks for 6months, aging in new and used 500 litre of barrels for 24 months. After blending the wine it spent another 3 months in inox tanks.
