Alcoholic fermentation takes place in stainless steel tanks at a temperature below 16 °C (61 °F) for 12-14 days. Once malolactic fermentation is completed, the wine is transferred into 500 L oak barrels, where it remains for further 6 months for refinement. The wine undergoes constant battonage operations.
