Palate

An elegant and sumptuous honey-sweet, complex wine with a taste of ripe apricots, candied orange peel, honey and quince. The lively, pleasant acid is rounded off by a particularly long creamy finish.

Growing Conditions

The soil of this area is of volcanic origin, which was formed approximately fifteen million years ago. But soil alone is not a sufficient condition. In order for the well-loved and internationally renowned Tokaj aszu or sweet wines similar to aszu to be born, the right microclimate is also necessary, and these conditions are present here. In order to develop a unique climate, in addition to adequate sunshine, the presence of natural water is also necessary. In our case, this is ensured by the fact that the Bodrog flows into the Tisza here, which is a natural feature that ensures the humid autumn air, which is a guarantee for the preparation of aszú.

Winemaking

In addition to the soil and microclimate mentioned in the previous section, there is another important element that is necessary for the production of sweet wines. A natural ingredient due to a local microclimate: the noble mold (botrytis cinerea).

Sweet wines are made both in the northern and southern hemispheres of our planet, but what makes Tokaji Aszú special is that it is located between the two thanks to the climate of the area. It is warmer than the north and cooler than the south.

At the time of harvest, the individually selected aszu grains are collected in large vats and then crushed to a pulp. Must is poured over the resulting aszú pasta and left to soak for a day or two so that the sweetness and aroma can be extracted. After that, it is filtered, then fermentation is completed and aged in wooden barrels or tanks. Its concentration is determined by the ratio of the aszu grains and the base wine used to soak them. Although today the degree of concentration of Tokaji Aszú is not determined by putton , the concentration of the wine appears in this form on the labels of the bottles, thus respecting the traditions and their value-creating power.
