Winemaking
The dominant variety of the Bordeaux wine region, it was created by the spontaneous crossing of Cabernet Franc and Sauvignon Blanc. Its wine has a high acid and tannin content; its characteristic aroma is blackcurrant, and in the case of insufficient ripeness, green pepper. It is not mentioned before the 18th century, but this does not necessarily mean that it did not exist before: it is more likely that it was simply confused with Cabernet Franc for a long time. In Mo., it is grown on about 2,500 ha.
