Winemaking
After the 2008 vintage, the 2013 was the millennium’s second greatest vintage year for sweet wines. In September the weather was cool, and in October the cold and humidity continued, helping the Botrytis to become established.
For hundreds of years it has been made in the same manner, adding to a “Gönci” barrel (136 litres) of must, 5 panniers (puttonyos) with 25 kg of noble Aszú berries.
Aszú berries are macerated for one day until swelling and later gently pressed. Fermentation takes place in new Hungarian oak barrels; a slow process which can take up to two months.
Aging
Ageing process is completed in 136 and 220 liter barrels for 2,5 years and bottled for an additional year.
