Growing Conditions
The wine harvested from the Várhegy Vineyard’s goat-cultivated vines and the 90-100-year-old vines from the Bölyas Vineyard, registered since 1619, is a unique phenomenon. This vintage is made entirely from grapes grown under Biodynamic farming. It can surprise us from time to time with its almost unbelievable personality. The wine, which is sensitive to the phases of the moon, quickly earned our respect and taught us to pay attention and adapt to nature. Like a wise teacher.
Harvest
The harvest date is indicated by the walnut tree in the vineyard, usually the first week of October.
Winemaking
The old grapes produce as much as they need depending on the vintage. They are not so sensitive to processing, although we try to press them gently in whole clusters. The wine is particularly sensitive to any interventions (pulverization, clarification, etc.) when it is young and reacts extremely strongly, expressing its displeasure. Therefore, we have abandoned these procedures from this year. The natural Vesperas was born.
After a single pressing, 3 months of French kisfahrdós ageing, we bottled it with fine floating lees, without added sulphur.
If we waited all this, it is true that by tasting it taking into account the phases of the moon, we can taste a miracle. If you don't believe it, go find out. It is no coincidence that several vintages of the wine have earned the attention of wine connoisseurs.
Aging
The wine of tranquility, it was aged for 10-12 months on coarse lees.
